The seasonal special of our strawberry shortcake highlighting rhubarb season. Airy, moist and moreish Paleo sponge cake with natural shades of red, pink and rose! This cake is 4 layers with a layer each: rhubarb compote, apple rhubarb curd and strawberry compote. Frosted with a honeycomb whipped cream.

Ingredients: Organic free-range eggs, strawberries, apple, rhubarb, organic honey, organic maple, vanilla, lemon, organic coconut, sea salt, baking soda, organic shea, organic almonds, organic arrowroot, organic unrefined demerara, xanthan gum

Storage & Preparation: Keep refrigerated for up to 5 days. Leave to thaw till room temperature for 1-2 hours for best texture.
